Lemon Hummus Dressing Vinegrette

One thing I’ve always hated about salads is the false advertising that usually comes with them. Whether you get one at a restaurant or make it at home, all of the healthy ingredients usually get drenched in pre-made dressing thats like 1,000 calories. Making your own dressing is an easy solution (and a tastier one IMO) when making salads at home. My favorite lately has been this lemon hummus dressing I’m sharing today! It’s got so much flavor, yet tastes so light and refreshing at the same time.

Eating at Home…

What I love most about this dressing it that it can be used on so much more than just salads. Recovering junk food addict over here will be the first to admit that healthy food can be soooo bland sometimes. Being able to put this dressing on top of my boring ass grilled chicken, brown rice, and side salad has been a life saver. It makes eating healthier a lot easier and more enjoyable.

Funny story…A few nights ago, I made turkey meatballs for the first time and tasted one to discover that I actually really don’t like the way ground turkey tastes. It’s a little too gamey for me. I threw the meatballs over quinoa and doused them in lemon hummus dressing and, I shit you not, they were amazing!

Eating Out…

Let’s talk about eating out for a minute. Although we can’t bring a homemade dressing to dinner with us (or can we?), there are ways to keep your salads healthy when eating out. I recently got my hands on Anika Capozza‘s meal plan cookbook, We’re Not On A Diet (follow them on IG!). One of my favorite restaurant tips she includes is to always get dressing on the side. Use only a 1/4 to 1/2 of the dressing, ask for lemon and ground pepper and you’re set. Lemon Hummus Dressing

Lemon Hummus Dressing Recipe

1/4 cup Olive Oil

2 heaping tbs Hummus

1 Lemon

1 tsp Red Wine Vinegar

1 tbs Dried Oregano

1 tbs Dried Parsley

Salt & Pepper to taste
